On the way home from work I start brainstorming ideas for a quick healthy meal. I got as far as Chicken....something with chicken....cooking the chicken with something.....chicken and....another item. I wasn't feeling inspired andI knew I would need to make a Kroger run so I decided I would browse the produce department for inspiration. I was inspired by Red Cabbage!
It was just so vibrant and healthy looking. I decided I must structure my meal around working in this beautiful purple head. A vegetable medley would be simple enough, I decided. So I grabbed a zuchinni and a yellow squash

I chopped the veggies and tossed them in lemon juice and sea salt and steamed them with two crushed garlic cloves and the squeezed lemon peels.
For the chicken I made a marinade out of three simple ingredients.
I recommend tenderizing the meat. I only let is sit for about 5 minutes.
Bake at 325 for 40-45 minutes.
I served with a spring mix salad.
TA-DA!
Yes, I made this recipe up and yes, it was delicous!
Note: I'm going to use the leftover chicken on a salad tomorrow for lunch :)

ReplyDeleteThanks Kelly! It is so super easy! Itis about 15 minutes of prep at the most and then you just throw it in and wait! I went ahead and put the veggies on the stove and then turned them on when chicken had about 15-20 minutes left. :)

ReplyDeleteMargie,It's hit or miss with Sean. Sometimes he is all about the healthy food and sometimes he turns his nose up at stuff like cabbage!
DeleteBut, funny story: He forgot that I was cooking last night and had gone to subway!
So I ate it by myself anyway:)He felt pretty rotten about it but
he is eating some of the leftover chicken for lunch but I doubt he will eat the veggies ;)
We'll see!
